Oatmeal Cookies

1 cup Butter or margarine
1 cup Brown sugar
1 cup White sugar
2 Eggs, well beaten
1 tsp Vanilla
1-1/2 cup Flour
1 tsp Salt
1 tsp Baking soda
3 cups Quick rolled oats

Mix together butter, brown sugar, white sugar and vanilla. Then add flour, salt, baking soda and quick rolled oats. Drop spoonfuls of dough on a pan and press with a fork. Bake for 12-15 minutes at 350 degrees.

Optionally add: chocolate chips, coconut or raisins.
