Greek Style Chicken And Rice

Marinade
2 ½ Pounds Chicken Breast
1 ½ Cup Full-Fat Greek Yogurt
Fre1 Tablespoonsh Garlic
1 Lemon Zest
1 Teaspoon Curry Powder
1 Teaspoon Salt
1 Teaspoon Dried Oregano
½ Teaspoon Cumin
½ Teaspoon Ground Coriander

Rice
2 Tablespoon Olive Oil
1 Cup Jasmine Rice
1 Teaspoon Curry Powder
½ Teaspoon Pepper
½ Teaspoon Turmeric
1 ½ Chicken Stock
Salt To Taste

Start by marinating 2 and a half pounds of chicken breast in a flavourful mixture of full-fat Greek yogurt, fresh garlic, lemon zest, curry powder, salt, dried oregano, cumin, and ground coriander. Let the chicken marinate for at least an hour or overnight for maximum flavour.
 
Next, prepare the rice by heating the olive oil in a pot and adding jasmine rice, curry powder, pepper, and turmeric. Toast the spices for a minute before adding the chicken stock and salt to taste. Cover the pot and let the rice cook until tender and fluffy.
 
Finally, grill or bake the marinated chicken until fully cooked and serve with the rice and white yogurt sauce.
